Lemon Garlic Roasted Broccoli

ImageThis has quickly become my favorite side dish! I have always loved broccoli but didn’t know that broccoli could be eaten without Velveeta or parmesan cheese until I was an adult. I recently started making lemon garlic roasted broccoli and am hooked!

Preheat oven to 400 degrees

1 lemon

1 stalk of broccoli

1 tablespoon olive oil

1 teaspoon minced garlic

fresh ground pepper, to taste

parmesan (optional, to taste)

Clean and separate broccoli into bite-sized pieces. Squeeze lemon into large cooking bowl. Add olive oil. Stir broccoli into bowl. Add pepper and parmesan, to taste. Spread onto a greased baking sheet. Bake for 25 minutes. Remove and squeeze remaining lemon juice over broccoli.
